Almond Chocolate Cookies

Anybody still doing holiday baking? Cookies must be on your list . I have this cookie recipe that I have been working on and I’ll share the version that tastes sweet but be sure to read my notes at the bottom about how they still taste great without a sweetener. I have baked these cookies without any honey and they tastes fine to me but if you are making for other people they prefer sweet cookies so the honey comes in .


They are very easy to make and very few ingredients too.


  • 1 cup almond flour
  • 1/3 cup olive oil (substitute coconut oil)
  • 1 teaspoon baking powder
  • 1/4 cup cacao powder (dark unsweetened)
  • 60 grams crushed almonds
  • 1 tablespoon vanilla extract
  • 1/2 cup honey (or less)


Pre-heat oven to 160 degrees Celcius

Mix together the flour , baking powder, cacao powder and crushed almonds.

Separately mix the oil and honey until well combined.

Mix the dry ingredients and the wet ingredients together until you have dough consistency. Wrap in a foil and put the refrigerator for half an hour, this makes it firmer to cut later.

Finally shape the cookies and place on  baking tray and bake in the oven for 10-12 minutes. They bake very fast so keep an eye out for them.


These cookies are absolutely delicious without the honey, so if you want you can try to omit that and just increase the crushed almonds you use. They have a very distinct almond flavor.
