I have been drinking a lot of smoothies lately and sometimes i want a smoothie and a pancake, so what I do is just turn the smoothie into a pancake or giant pancakes to make it even better! They are like very thick crepes.
These Spinach Pancakes don’t taste anything like spinach, they are sweet yet they have no refined sugar! I think that deserves recognition. And we don’t have so many ingredients here, just a few. I literally turned my morning green smoothie into these pancakes.
Check out the ingredient list :
- 2 cups all purpose flour
- 2 cups baby spinach
- 2 bananas
- 220 ml soy milk (you can use your milk of choice)
- 2 teaspoons chia seeds
- 1 teaspoon baking powder
These are the easiest crepes to make, You just place everything in a blender and blend until smooth.
Then lightly grease your pan, and once it is heated, Pour 1/2 cup batter on top and swirl pan around until it is all covered in the batter. You can pour 1/3 cup batter per pancake to make thicker ones. This depends on how many crepes you want, this batter can make from 6-10 pancakes. In between each pancake just use a kitchen towel and wipe the pan, you can grease it with butter to prevent it from sticking but you will see this will nit be necessary with all the pancakes.
Let it dry and then flip it, cook the other side for 2 minutes and place the pancake on a plate. Cook the rest in the same way.
You can serve them with anything you wish, as they are sweet maybe you don’t need any syrup.
