Apple Butternut Squash Soup

This Butternut Squash Soup is my favorite soup. It’s not your normal butternut soup because i add a roasted apple. Did you know when you roast/ bake some fruits it gets really sweet? well that’s what the apple serves here. This soup is my dessert soup actually because it is sweet. I have actually changed this recipe because before i used to also add sugar but then realized it tastes even better without the sugar. Most butternut soups are well really good but they always have so many different ingredients that the butternut is barely being tasted and i personally love butternut squash so when am using it in food the flavor has to be really distinct.

Anyway this recipe had to be reshared because we all know we need some comfort food around this time.

Some variations as to how to enjoy this soup.

You can sprinkle some cinnamon powder on your butternut squash before roasting it to give it added sweetness.

You can grate in some nutmeg (just a little bit).

You can serve this soup as a side, or like i said earlier instead of all the cakes and ice cream for dessert just server this soup topped with some raisins.

These are all the very many ways i have had this soup, I hope it brings you comfort and joy!


  • ½ butternut Squash seeds removed
  • 1 carrot diced
  • ½ onion chopped
  • 1 apple chopped
  • 1/2 cup coconut milk (or 1/4 cup coconut cream)
  • Salt & pepper to taste
  • Salt & pepper to taste


  1. Place your chopped butternut squash and apples on a greased baking sheet and bake at 425 degrees Fahrenheit for 45 minutes.
  2. In a pot add some vegetable oil and the carrots, and onions. Season with the salt and pepper. Sauté until cooked no longer than 4 minutes.
  3. Add the butternut squash into the pot and the coconut milk or cream. Let cook this for 1-2 minutes and take off heat.
  4. Add everything into food processor and pulse. Serve
