I am pretty sure you have had this before, especially if you have ever eaten at a Chinese restaurant. It packs so much flavor and it’s healthy and balanced, all the good stuff. There is one but with the version served at restaurants, and that is that it’s not entirely clean or healthy. They add sugar and cornstarch to the sauce to sweeten and thicken it. If you pay close attention to most Chinese take out stir fry, you will notice that after you eat you get sleepy. Am not saying their food is bad, i mean am an addict myself, lord knows they know how to get you hooked on it, but it’s not healthy to eat cornstarch all the time. And don’t get me started on sugar, I mean you have such a limited daily allowance that you simply should not be wasting it in your savory dishes. my philosophy is if you can avoid it then please swerve.
Anyway here is my very clean very healthy very simple Chicken Broccoli stir-fry that i modified.
If you can get organic / low sodium soy sauce that would be the best to use. The other say sauce just packs in a lot of sodium. And the flavor is also too strong!
- 2 chicken breast sliced (or cubed)
- 1 broccoli head chopped
- 3 scallions, chopped
- 3 cloves garlic, minced
- 1 -inch piece peeled fresh ginger, minced
- 2 tablespoon soy sauce
- 1 tablespoon dark sesame oil
- 1 teaspoon sesame seeds (optional)
- Water as needed
- red chili flakes( optional)
In a medium bowl, add 1 tablespoon soy sauce and half cup water. Add half the ginger and garlic.
Cut the chicken into pieces and marinate in this mixture for at least 15 minutes.
In a nonstick skillet over high heat ,Add 1 tablespoon of the oil and the chopped onion. Saute the onions for 3-4 minutes and add the chicken, garlic and ginger. Let the chicken cook until it is no longer raw, about 10 minutes, then add the broccoli and the remaining soy sauce and 1 tablespoon sesame oil.
Add 2 tablespoons water stir and cover to cook for another 4-5 minutes. Until the broccoli is bright green and cooked
Done! Your Chicken broccoli stir-fry is ready! ( You know broccoli cooks quickly so add it in when you are sure the chicken is ready)
Serve with some rice and enjoy
