My favorite Kenyan dish has got to be beef matoke (green bananas) made by an aunt of mine who makes it so good only because it’s always super packed with spices and butter and she uses fatty beef says it tastes good. Anyway anyway tell me if you want more of that because this beef matoke is equally tasty but healthy creamy and so so easy. Ingredients are less than 10, check them out.
- Green bananas
- Coconut milk
- Beef (already boiled)
- Beef stock
- Curry powder
- salt to taste
So First things first, Boil the meat with ginger until its soft and tender. Meanwhile peel and wash the bananas. Now you must keep them in water as they turn black fast. A trick is to boil the bananas and peel them afterwards if them turning black is something you can’t avoid.
Now chop onions and put them in a pot with some cooking oil (vegetable cooking oil). Cook the onions until they have wilted then add chopped tomatoes. The tinier the faster they cook. Make sure the tomatoes have cooked completely and now you have a sauce in your pot.
Now add the Green beans and you can slice them however size you want. Once they have begun to soften add the meat, curry powder, black pepper and salt. Stir and Let this cook for a few minutes. As soon as it begins to dry up add stock (vegetable or beef), Make sure the stock covers the bananas and they are fully immersed.
Let this boil uncovered until the bananas are now cooked, then pour in the coconut milk and stir. Reduce heat and let it simmer for 2-3 minutes. Check for salt and serve.
Sometimes you can skip the stock and only use coconut milk then mash it and serve. Either way it tastes so great!
