Ingredients

Scale
  • 1 cup fresh morel mushrooms
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Salt and pepper to taste
  • Vegetable oil for frying
  • Lemon wedges for serving

Instructions

  1. Start by preparing the morel mushrooms. Rinse them thoroughly under cold water to remove any dirt or debris. Pat them dry with paper towels.
  2. Set up a breading station with three shallow bowls. Place the flour in one bowl, the beaten eggs in another, and the breadcrumbs in the third.
  3. Season the flour with salt and pepper to taste. Dredge each morel mushroom in the seasoned flour, shaking off any excess.
  4. Dip the floured mushrooms into the beaten eggs, allowing any excess egg to drip off.
  5. Coat the mushrooms in breadcrumbs, pressing gently to adhere the breadcrumbs to the surface.
  6. Heat vegetable oil in a frying pan over medium-high heat. Once the oil is hot, carefully add the breaded morel mushrooms in batches, making sure not to overcrowd the pan.
  7. Fry the mushrooms for 2-3 minutes on each side, or until they are golden brown and crispy.
  8. Use a slotted spoon to transfer the fried morels to a plate lined with paper towels to drain any excess oil.
  9. Serve the fried morels hot with lemon wedges on the side for squeezing over the mushrooms.

Notes

  • When cleaning morel mushrooms, be sure to inspect them carefully for any insects or debris that may be hiding in the crevices.
  • Avoid washing morels under running water, as they can absorb excess moisture and become soggy. Instead, gently wipe them with a damp cloth or brush to remove any dirt.
