  • 1/2 teaspoon fresh ground black pepper
  • 2 cloves garlic, minced
  • 68 tortillas, warmed

Instructions

  1. Marinate the Steak and Vegetables:
    • Place the steak in a sealable bag and the peppers and onion in a separate sealable bag.
    • In a jar with a tight-fitting lid, combine olive oil, lime juice, chili powder, ground cumin, cayenne pepper, salt, black pepper, and minced garlic. Shake well to combine.
    • Pour ⅓ of the marinade over the steak, ⅓ over the vegetables, and reserve the remaining marinade for cooking.
    • Seal the bags tightly and refrigerate for at least one hour or overnight.
  2. Cooking:
    • Heat a large skillet over medium-high heat.
    • Cook the vegetables until just tender-crisp, about 5 minutes. Remove from skillet and set aside.
    • Add steak strips to the same skillet and cook until desired doneness, about 7-10 minutes.
    • Return vegetables to the skillet along with the reserved marinade. Stir to combine.
  3. Serving:
    • Serve the steak and vegetables in warm tortillas.
    • Garnish with desired optional toppings such as salsa, guacamole, sour cream, or shredded cheese.
