Ingredients
  

  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup buttermilk
  • 1 large egg, beaten
  • 2 cups fresh or frozen corn kernels
  • 1/4 cup finely chopped green onions
  • 1/4 cup finely chopped bell pepper
  • Vegetable oil for frying

Instructions
 

  • In a large bowl, combine cornmeal, flour, baking powder, baking soda, salt, and black pepper.
  • In a separate bowl, whisk together buttermilk and beaten egg. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  • Fold in corn kernels, green onions, and bell pepper until evenly distributed in the batter.
  • In a deep skillet or frying pan, heat about 1 inch of vegetable oil over medium-high heat.
  • Drop spoonfuls of the batter into the hot oil, making sure not to overcrowd the pan. Fry until golden brown on both sides, turning once, about 2-3 minutes per side.
