Ingredients
  

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 6 large eggs
  • 1 cup milk
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg (optional)

Instructions
 

  • Preheat your oven to 375°F (190°C). Grease a pie dish or quiche pan.
  • In a large skillet, heat olive oil over medium heat. Add chopped onions and garlic, sautéing until softened.
  • Add chopped spinach to the skillet and cook until wilted. Remove from heat and let it cool slightly.In a mixing bowl, beat eggs and then whisk in milk, dried oregano, salt, black pepper, and nutmeg (if using).
  • Stir in the crumbled feta cheese and the cooked spinach mixture into the egg mixture until well combined.
  • Pour the mixture into the prepared pie dish or quiche pan.
  • Bake in the preheated oven for 30-35 minutes or until the quiche is set and the top is golden brown.
  • Allow the quiche to cool for a few minutes before slicing and serving.

Notes

This crustless quiche is versatile, so feel free to add your favorite vegetables or other ingredients to customize it to your liking. It's also great for meal prep and can be enjoyed hot or cold.
