  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions
 

  • In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
  • Preheat a griddle or non-stick skillet over medium heat. Lightly grease with cooking spray or butter.
  • Pour 1/4 cup portions of batter onto the griddle for each pancake. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
  • Repeat until all the batter is used.
  • Serve the pancakes warm, topped with fresh berries and maple syrup if desired.
