Artichoke Parmesan Sandwich

Ingredients
  

  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup mayonnaise
  • 1/4 cup chopped fresh basil
  • 2 cloves garlic, mincedSalt and pepper to taste
  • 4 hoagie rolls
  • 1/4 cup butter, melted
  • 1 cup marinara sauce
  • Additional Parmesan for garnish

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a bowl, combine chopped artichoke hearts, Parmesan cheese, mozzarella cheese, mayonnaise, chopped basil, minced garlic, salt, and pepper. Mix well.
  • Cut the hoagie rolls in half and place them on a baking sheet.
  • Brush the inside of each roll with melted butter.
  • Spoon the artichoke mixture onto the bottom half of each roll.
  • Place the baking sheet in the oven and bake for 15-20 minutes or until the sandwiches are hot and the cheese is melted and bubbly.
  • While the sandwiches are baking, heat the marinara sauce in a small saucepan over medium heat.
  • Once the sandwiches are done, remove them from the oven and spoon a generous amount of marinara sauce over the artichoke mixture.
  • Place the top half of the rolls on each sandwich.
  • Garnish with additional Parmesan if desired.
  • Serve hot and enjoy!

Notes

Customize the sandwich by adding your favorite toppings or serve with a side of mixed greens for a complete meal.
