Ingredients
  

  • 1 ½ cups unsalted butter, softened
  • 3 cups granulated sugar
  • 5 large eggs
  • 3 cups all-purpose flour
  • ½ teaspoon salt
  • ½ cup 7UP (or similar lemon-lime soda)
  • 1 teaspoon lemon extract
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat your oven to 325°F (163°C). Grease and flour a bundt pan.
  • In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition.
  • In a separate bowl, combine the flour and salt. Gradually add the dry ingredients to the butter mixture, alternating with the 7UP. Begin and end with the dry ingredients.
  • Stir in the lemon and vanilla extracts until well combined.
  • Pour the batter into the prepared bundt pan and smooth the top.
  • Bake in the preheated oven for 1 hour and 15 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for 15 minutes, then transfer it to a wire rack to cool completely.

Notes
