  • 1 lb antelope meat, cubed
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 2 cups beef broth
  • 1/2 cup Jägermeister
  • 1 tablespoon tomato paste
  • 2 bay leaves
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the cubed antelope meat and brown on all sides. Remove from pot and set aside.
  2. In the same pot, add the diced onion, sliced carrots, chopped celery, and minced garlic. Cook until vegetables are softened, about 5 minutes.
  3. Return the browned antelope meat to the pot. Add sliced mushrooms, beef broth, Jägermeister, tomato paste, and bay leaves. Season with salt and pepper to taste.
  4. Bring the stew to a simmer, then reduce heat to low. Cover and let simmer for 1.5 to 2 hours, or until the antelope meat is tender.
  5. Serve hot, garnished with fresh parsley.
