  • 1-inch ginger, grated
  • 2 green chilies, chopped
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • Salt to taste
  • Fresh cilantro leaves for garnish
  • Cooking oil

Instructions

  1. Heat oil in a pan and sauté onions until golden brown.
  2. Add garlic, ginger, and green chilies, and cook for a few minutes until fragrant.
  3. Add diced tomatoes and cook until they soften and release their juices.
  4. Stir in turmeric, cumin, and coriander powder, and cook for another minute.
  5. Add diced Nilgai meat to the pan and cook until browned on all sides.
  6. Pour in water or broth to cover the meat, season with salt, and bring to a boil.
  7. Reduce the heat, cover, and simmer for 45-60 minutes until the meat is tender.
  8. Garnish with fresh cilantro leaves and serve hot with rice or bread.
