  • 1 whole rabbit, cut into pieces
  • 8 ounces pasta (such as fettuccine or penne)
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (14 ounces) diced tomatoes
  • 1 cup chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add the rabbit pieces and cook until browned on all sides. Remove from the pot and set aside.
  2. In the same pot, add the chopped onion and garlic. Cook until softened and fragrant, about 3-4 minutes.
  3. Return the rabbit pieces to the pot. Add the diced tomatoes, chicken broth, dried thyme, and dried rosemary. Season with salt and pepper to taste.
  4. Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for about 1 hour, or until the rabbit is tender and easily falls off the bone.
  5. While the rabbit is cooking, cook the pasta according to the package instructions until al dente. Drain and set aside.
  6. Once the rabbit is cooked, remove the pieces from the pot and shred the meat using two forks. Return the shredded meat to the pot and stir to combine with the sauce.
  7. Serve the rabbit and sauce over cooked pasta. Garnish with fresh parsley and additional black pepper, if desired.

Notes

  • If rabbit meat is not readily available, you can substitute it with chicken thighs or pork shoulder for a similar texture and flavor.
