  • 1 wild boar shoulder, approximately 4-5 pounds
  • 2 onions, chopped
  • 4 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 cup red wine
  • 2 cups beef or vegetable broth
  • 2 sprigs fresh rosemary
  • 4 sprigs fresh thyme
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Season the wild boar shoulder generously with salt and pepper.
  3. Heat olive oil in a large Dutch oven or roasting pan over medium-high heat. Brown the boar shoulder on all sides until golden brown, then remove from the pan and set aside.
  4. In the same pan, add the chopped onions, garlic, carrots, and celery. Cook until the vegetables are softened and lightly browned.
  5. Deglaze the pan with red wine, scraping up any browned bits from the bottom.
  6. Return the boar shoulder to the pan and add the beef or vegetable broth. Add the fresh rosemary and thyme sprigs.
  7. Cover the pan with a lid or aluminum foil and transfer to the preheated oven.
  8. Roast for 3-4 hours, or until the meat is tender and falling off the bone.
  9. Remove the pan from the oven and let the boar shoulder rest for 10-15 minutes before carving.
  10. Serve the wild boar shoulder with the roasted vegetables and pan juices.

Notes

If wild boar shoulder is not available, you can use domesticated pork shoulder as a substitute. Adjust cooking times as needed, as domesticated pork may cook faster than wild boar.
