Marinated Baked Veggie Kabobs

Ingredients
  

  • 1 large red bell pepper, cut into chunks
  • 1 large yellow bell pepper, cut into chunks
  • 1 zucchini, sliced into rounds
  • 1 red onion, cut into wedges
  • 1 cup cherry tomatoes
  • 8 oz mushrooms, cleaned and halved
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Wooden or metal skewers

Instructions
 

  • In a small bowl, whisk together olive oil, balsamic vinegar, minced garlic, dried oregano, dried thyme, salt, and pepper to create the marinade.
  • Place the prepared vegetables in a large bowl and pour the marinade over them. Toss gently to coat all the veggies evenly. Let them marinate for at least 30 minutes, or preferably, refrigerate overnight for more flavor.
  • Preheat the oven to 400°F (200°C).
  • Thread the marinated vegetables onto skewers, alternating colors and varieties.
  • Place the skewers on a baking sheet lined with parchment paper or lightly greased.
  • Bake in the preheated oven for 20-25 minutes or until the vegetables are tender and slightly charred, turning the skewers once halfway through the cooking time.

Notes

For a smoky flavor, you can also grill the marinated veggie kabobs instead of baking them. Additionally, feel free to customize the vegetables based on your preferences. Serve these kabobs as a side dish, over couscous, or with a side of tzatziki sauce for added richness.
