Ingredients
  

  • 3 medium-sized potatoes, peeled and diced
  • 2 heads of bok choy, chopped
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 carrot, sliced
  • 6 cups vegetable or chicken broth
  • 1 teaspoon ginger, grated
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Green onions, for garnish
  • Optional: red pepper flakes for heat

Instructions
 

  • In a large pot, sauté the chopped onion and minced garlic until fragrant.
  • Add the diced potatoes, sliced carrot, and grated ginger to the pot. Stir and cook for 5 minutes.
  • Pour in the vegetable or chicken broth, soy sauce, and sesame oil. Bring the soup to a boil, then reduce the heat to a simmer and cover. Cook for 15-20 minutes or until the potatoes are tender.
  • Add the chopped bok choy to the pot and cook for an additional 5 minutes, allowing the greens to wilt.
  • Season the soup with salt and pepper to taste. If you like some heat, add red pepper flakes.
  • Serve the soup hot, garnished with chopped green onions.

Notes

Feel free to customize this soup by adding tofu, mushrooms, or other vegetables of your choice. Adjust the seasoning according to your taste preferences. This soup is not only delicious but also a great way to get a variety of nutrients from the bok choy and other vegetables.
