Ingredients
  

  • 1 cup gluten-free all-purpose flour
  • 1/2 cup almond flour
  • 1/2 cup coconut flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup coconut oil, melted
  • 1/2 cup maple syrup or agave nectar
  • 1 teaspoon vanilla extract
  • 1/2 cup dairy-free chocolate chips

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, whisk together the gluten-free all-purpose flour, almond flour, coconut flour, baking soda, and salt.
  • In a separate bowl, combine the melted coconut oil, maple syrup (or agave nectar), and vanilla extract. Mix well.
  • Add the wet ingredients to the dry ingredients and stir until a dough forms.
  • Fold in the dairy-free chocolate chips until evenly distributed throughout the dough.
  • Use a cookie scoop or tablespoon to drop rounded portions of dough onto the prepared baking sheet, leaving space between each cookie.
  • Flatten each cookie slightly with the back of a spoon or your fingers.
  • Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For an extra touch, you can add chopped nuts or shredded coconut to the dough before baking. Ensure all ingredients are labeled gluten-free and dairy-free if following a strict diet.
