Ingredients
  

  • 400g spaghetti
  • 200g pancetta or bacon, diced
  • 3 large eggs
  • 1 cup grated Pecorino Romano cheese
  • 1 clove garlic, peeled
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions
 

  • Cook the spaghetti in a large pot of boiling salted water until al dente. Drain and set aside.
  • In a skillet, cook the diced pancetta or bacon over medium heat until crispy.
  • Remove from the heat and set aside.In a bowl, whisk together the eggs, grated Pecorino Romano cheese, minced garlic, salt, and black pepper.
  • Add the cooked spaghetti to the skillet with the pancetta, tossing to combine and heat through.
  • Remove the skillet from the heat and quickly pour the egg and cheese mixture over the pasta, tossing continuously to create a creamy sauce.
  • Garnish with chopped fresh parsley and additional cheese if desired.
  • Serve immediately and enjoy!

Notes

cautious when adding the egg and cheese mixture to the hot pasta to avoid scrambling the eggs. Toss quickly and continuously to achieve a creamy carbonara sauce. Adjust seasoning according to taste preference.
