Ingredients
  

  • 1 cup unsalted butter, softened
  • 2 cups confectioners' sugar
  • 1 1/2 teaspoons peppermint extract
  • 1/2 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 4-6 drops green food coloring (optional)
  • 1 cup semisweet chocolate chips
  • 1 tablespoon vegetable shortening

Instructions
 

  • In a large mixing bowl, cream together the softened butter and confectioners' sugar until light and fluffy.
  • Add the peppermint extract, vanilla extract, and food coloring (if using). Mix until well combined.
  • In a separate bowl, whisk together the flour and salt. Gradually add this dry mixture to the butter mixture, mixing until just combined.
  • Shape the dough into two logs, wrap them in plastic wrap, and refrigerate for at least 1-2 hours, or until firm.
  • Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  • Slice the chilled dough into 1/4-inch thick rounds and place them on the prepared baking sheets.
  • Bake for 10-12 minutes or until the edges are lightly golden.
  • Allow the cookies to cool completely on wire racks.

Notes

For a more intense mint flavor, consider using peppermint extract with a higher concentration. Adjust the amount according to your taste preferences. Additionally, you can customize the appearance by drizzling white chocolate on top or sprinkling crushed candy canes before the chocolate coating sets.
