In a mixing bowl, combine softened cream cheese, powdered sugar, and vanilla extract. Beat until smooth and well combined.
Gently fold in the drained crushed pineapple.In a separate bowl, whip the cream until stiff peaks form.
Carefully fold the whipped cream into the cream cheese and pineapple mixture.
Spread the mixture evenly over a prepared graham cracker crust.
Refrigerate for at least 4 hours or until set.
Once set, slice and serve chilled.
Notes
For a tropical twist, garnish with additional pineapple chunks or shredded coconut before serving. Adjust the sweetness according to your preference by adding more or less powdered sugar.
