Ingredients
1 pound dried northern beans, soaked overnight
8 slices bacon, chopped
1 onion, finely chopped
3 cloves garlic, minced
4 cups chicken broth
1 bay leaf
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the bacon grease in the pot.
Add chopped onion to the pot and sauté until softened, about 5 minutes. Add minced garlic and cook for an additional 1-2 minutes.
Drain and rinse the soaked northern beans, then add them to the pot along with chicken broth, bay leaf, salt, and pepper.
Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 1.5 to 2 hours or until the beans are tender.
Once the beans are cooked, remove the bay leaf and stir in the cooked bacon.
Adjust seasoning if needed.
Serve the northern beans hot, garnished with fresh chopped parsley.
Notes
You can add a touch of acidity with a splash of apple cider vinegar or a squeeze of lemon juice before serving for extra flavor.
