Ingredients
  

  • 1 pound dried northern beans, soaked overnight
  • 8 slices bacon, chopped
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions
 

  • In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the bacon grease in the pot.
  • Add chopped onion to the pot and sauté until softened, about 5 minutes. Add minced garlic and cook for an additional 1-2 minutes.
  • Drain and rinse the soaked northern beans, then add them to the pot along with chicken broth, bay leaf, salt, and pepper.
  • Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 1.5 to 2 hours or until the beans are tender.
  • Once the beans are cooked, remove the bay leaf and stir in the cooked bacon.
  • Adjust seasoning if needed.
  • Serve the northern beans hot, garnished with fresh chopped parsley.

Notes

You can add a touch of acidity with a splash of apple cider vinegar or a squeeze of lemon juice before serving for extra flavor.
