Shrimp and Spinach Tortellini Alfredo

Ingredients
  

  • 1 pound shrimp, peeled and deveined
  • 1 pound spinach and cheese tortellini
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup baby spinach, chopped
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Cook the tortellini according to package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  • Add shrimp to the skillet and cook until they turn pink and opaque. Remove shrimp from the skillet and set aside.
  • In the same skillet, pour in the heavy cream and bring it to a simmer. Stir in Parmesan cheese until it melts and the sauce thickens.
  • Add chopped spinach to the Alfredo sauce and cook until wilted.
  • Toss the cooked tortellini and cooked shrimp into the skillet, coating them with the Alfredo sauce.
  • Season with salt and pepper to taste. Garnish with fresh parsley.
  • Serve hot and enjoy!
