Ingredients
1 pound shrimp, peeled and deveined
1 pound spinach and cheese tortellini
2 tablespoons olive oil
4 cloves garlic, minced
1 cup heavy cream
1 cup grated Parmesan cheese
1 cup baby spinach, chopped
Salt and pepper to taste
Fresh parsley for garnish
Instructions
Cook the tortellini according to package instructions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
Add shrimp to the skillet and cook until they turn pink and opaque. Remove shrimp from the skillet and set aside.
In the same skillet, pour in the heavy cream and bring it to a simmer. Stir in Parmesan cheese until it melts and the sauce thickens.
Add chopped spinach to the Alfredo sauce and cook until wilted.
Toss the cooked tortellini and cooked shrimp into the skillet, coating them with the Alfredo sauce.
Season with salt and pepper to taste. Garnish with fresh parsley.
Serve hot and enjoy!
