Ingredients
  

  • 2 cup fat-free Greek yogurt
  • 8 oz fat-free cream cheese, softened
  • 1/2 cup granulated sugar substitute (e.g., erythritol or stevia)
  • 2 tsp vanilla extract3 large eggs
  • 1/4 cup all-purpose flour
  • 1/4 cup unsweetened almond milkPinch of salt

Instructions
 

  • Preheat your oven to 325°F (163°C) and line a muffin tin with paper liners.
  • In a large mixing bowl, combine Greek yogurt, cream cheese, and sugar substitute.
  • Mix until smooth.Add vanilla extract, eggs, flour, almond milk, and a pinch of salt.
  • Mix until well combined.Pour the batter evenly into the muffin tin, filling each cup about 2/3 full.
  • Bake in the preheated oven for 20-25 minutes or until the edges are set and the centers are slightly jiggly.
  • Allow the cheesecake bites to cool in the tin before transferring them to the refrigerator to chill for at least 2 hours.

Notes

Feel free to customize these cheesecake bites by adding your favorite sugar-free fruit compote or a sprinkle of cinnamon on top before serving. Adjust sweetness to your liking with more or less sugar substitute.
