The Kantarellpaj, or Swedish Chanterelle Pie, is a delightful dish that embodies the flavors of the Swedish forest. This savory pie features a buttery crust filled with a creamy mixture of fresh chanterelle mushrooms, onions, herbs, and eggs.   • 500g fresh chanterelle mushrooms
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 1 sheet puff pastry
  • 150g crème fraîche
  • 2 eggs
  • 100g shredded cheese (such as gruyère or cheddar)
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Clean the chanterelle mushrooms and roughly chop them.
  3. In a skillet, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until softened.
  4. Add the chanterelle mushrooms to the skillet and cook until they release their moisture and become golden brown. Season with salt and pepper to taste.
  5. Roll out the puff pastry sheet and place it in a greased pie dish. Trim any excess pastry.
  6. In a bowl, whisk together the crème fraîche and eggs. Season with salt and pepper.
  7. Spread the cooked chanterelle mixture over the puff pastry. Pour the crème fraîche mixture over the mushrooms.
  8. Sprinkle the shredded cheese over the top.
  9. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and the filling is set.
  10. Garnish with fresh parsley before serving.

Notes

  • Be sure to thoroughly clean the chanterelle mushrooms to remove any dirt or debris before cooking.
  • You can use frozen puff pastry if you don’t have fresh pastry available. Simply thaw according to package instructions before using.
