- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons butter
- Salt and pepper to taste
- 1 sheet puff pastry
- 150g crème fraîche
- 2 eggs
- 100g shredded cheese (such as gruyère or cheddar)
- Fresh parsley for garnish
Instructions
- Preheat the oven to 200°C (400°F).
- Clean the chanterelle mushrooms and roughly chop them.
- In a skillet, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the chanterelle mushrooms to the skillet and cook until they release their moisture and become golden brown. Season with salt and pepper to taste.
- Roll out the puff pastry sheet and place it in a greased pie dish. Trim any excess pastry.
- In a bowl, whisk together the crème fraîche and eggs. Season with salt and pepper.
- Spread the cooked chanterelle mixture over the puff pastry. Pour the crème fraîche mixture over the mushrooms.
- Sprinkle the shredded cheese over the top.
- Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and the filling is set.
- Garnish with fresh parsley before serving.

- Be sure to thoroughly clean the chanterelle mushrooms to remove any dirt or debris before cooking.
- You can use frozen puff pastry if you don’t have fresh pastry available. Simply thaw according to package instructions before using.
