Ingredients

Scale
  • For the dough:
    • 500g all-purpose flour
    • 75g granulated sugar
    • 1 tsp salt
    • 7g active dry yeast
    • 250ml warm milk
    • 75g unsalted butter, melted
  • For the blueberry filling:
    • 200g fresh blueberries
    • 50g granulated sugar
    • 1 tbsp cornstarch
  • For the topping:
    • 1 egg, beaten
    • Pearl sugar (optional)

Instructions

  1. In a large mixing bowl, combine the flour, sugar, salt, and yeast. Gradually add the warm milk and melted butter, mixing until a dough forms.
  2. Knead the dough on a floured surface for about 5-7 minutes, or until smooth and elastic. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour, or until doubled in size.
  3. In the meantime, prepare the blueberry filling by combining the blueberries, sugar, and cornstarch in a saucepan. Cook over medium heat until the mixture thickens, then remove from heat and let it cool.
  4. Punch down the risen dough and divide it into equal portions. Roll out each portion into a rectangle and spread the blueberry filling evenly over the surface.
  5. Roll up each rectangle tightly, starting from the long edge, to form a log. Cut each log into slices and place them on a baking sheet lined with parchment paper.
  6. Cover the rolls with a clean kitchen towel and let them rise for another 30 minutes.
  7. Preheat your oven to 180°C (350°F). Brush the risen rolls with beaten egg and sprinkle with pearl sugar, if desired.
  8. Bake the rolls in the preheated oven for 15-20 minutes, or until golden brown.
  9. Remove the rolls from the oven and let them cool slightly before serving.

Notes

When making Blåbärsbullar, ensure to handle the dough gently to maintain its light and fluffy texture. Overworking the dough can result in dense buns. Additionally, be generous with the blueberries for maximum flavor in every bite. Enjoy these buns fresh from the oven for the best taste and texture.
