I will keep this post brief since it is another pancake series, I will not rant. That is not a promise though, I am just sharing this amazing strawberry pancakes recipe so I will leave it here and be on my way, also it’s finals season so got to get back to those Mechanics books. Anyone who’s done/doing Engineering knows you’ve got to literally revise for a whole month to the exams. Any well wishes are welcomed. If i can’t post this month please forgive in advance,but you can follow my Instagram where i share a lot of quick recipes.Anyway enjoy this recipe. Also this syrup is a MUST make, i insist please make it, and I added whip cream as an experiment and it tasted great, we actually used up the leftover syrup for the next 3 days on toast as it tasted kind a like jam.
- 2 cups All-purpose flour
- 2 tablespoons granulated sugar (optional, I really don’t add sugar to my pancakes)
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 egg
- 1 cup buttermilk (add bit by bit )
- 1/2 teaspoon vanilla extract
- ½ teaspoon cinnamon powder
- ¼ cup yoghurt
- 2 cups sliced strawberries
In a medium bowl, whisk together the flour, cinnamon, baking powder and salt. In a small bowl, whisk together the egg, ½ milk, yoghurt and vanilla. Preheat a nonstick pan over medium heat.
Whisk the wet ingredients into the dry. Add the rest of milk bit by bit until you get a smooth batter. The batter should be thick and smooth. Fold in the strawberries.
Spoon the batter onto the griddle/pan 3 tablespoons at a time. Cook the pancakes until set and thoroughly bubbly, about 3 minutes. Flip them with a spatula and cook until brown-ish, about 3minutes.Serve with syrup and some more strawberries. (you can add any toppings you like),go nuts literally
For the syrup:
- 1cup washed and chopped strawberries
- 1/4cup honey
- 1teaspoon cinnamon powder
- 1tablespoon whipping cream
In a medium nonstick pot, cook the strawberries, stirring continuously, when it starts to breakdown add the honey, cinnamon and cook for about 15minutes.it should be thick by now, then add the whip cream, and stir for a few more minutes,about 2-3minutes and set aside to cool down.
Serve syrup on pancakes and Enjoy!
