This creamy chicken and butternut squash soup contains only 5 ingredients but the taste will shock you very much. This is perfect as a starter or if you are like me make some for dinner so you can eat the leftover for breakfast.
- 1 pound chicken (I prefer buying whole chicken and using the bones and breast)
- 1 1/2 medium sized butternut squash
- 1 can (400ml) coconut milk
- 1 tablespoon olive oil
- 1 medium onion chopped
- 1 inch ginger (this is optional)
- salt and black pepper as per your taste
- 2 cups water
Peel and Chop the butternut squash. Place in a pot with water and add the chicken and ginger. Let boil until the chicken is tender. Take off heat and place the chicken breast on a plate to cool, throw away the bones (if you used any).Cut the chicken breast into small chunks, if it’s tender you can use your hands . Just make sure it has cooled down.
In an empty pot add 1 tablespoon olive oil and the chopped onion, cook the onions and add the chicken and butternut squash. Pour back in whatever water remained from boiling the chicken and butternut squash, this is packed with flavor now. Pour in the coconut milk or you can use cream instead. Season with salt and black pepper and let simmer for 2-3 minutes. Take off heat and let it cool. Pour into a blender and blend until smooth. You can use a food processor too to puree it. MAKE SURE IT HAS COOLED BEFORE BLENDING!
Serve with toasted bread .
I love this soup because its creamy and rich in flavor but still has natural ingredients which makes it super healthy. It takes very little time and if you despise peeling butternut squash , you can buy the peeled one from the store , or roast it in the oven so you don’t have to peel it.
