- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1/4 cup malted milk powder
- Pinch of salt
- 4 large egg yolks
- 1 teaspoon vanilla extract
Instructions
- In a saucepan, combine the heavy cream, milk, sugar, malted milk powder, and salt. Cook over medium heat, stirring occasionally, until the mixture begins to steam.
- In a separate bowl, whisk the egg yolks. Gradually whisk in about 1/2 cup of the hot cream mixture to temper the eggs.
- Pour the egg mixture back into the saucepan with the remaining cream mixture. Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon.
- Remove from heat and stir in the vanilla extract. Strain the mixture through a fine-mesh sieve into a clean bowl.
- Cover the bowl with plastic wrap, pressing it directly onto the surface of the custard to prevent a skin from forming. Chill in the refrigerator for at least 4 hours or overnight.
- Once chilled, pour the custard into an ice cream maker and churn according to the manufacturer’s instructions.
- Transfer the churned ice cream to a freezer-safe container and freeze for an additional 2-4 hours, or until firm.
- Serve the malted milk ice cream scooped into bowls or cones, and enjoy!

- Be careful not to overcook the custard, as it may result in a scrambled egg texture.
- Straining the custard helps to remove any lumps or bits of cooked egg for a smoother ice cream.
