Ingredients

- 200g soba noodles
- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 1 onion, sliced
- 1 carrot, julienned
- 1 bell pepper, sliced
- 100g mushrooms, sliced
- 100g cabbage, shredded
- 150g protein of choice (chicken, beef, shrimp, tofu)
- 3 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon mirin
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Spring onions, sliced (for garnish)
- Sesame seeds (for garnish)
Instructions
- Cook soba noodles according to package instructions. Drain and set aside.
- In a large skillet or wok, heat vegetable oil over medium-high heat. Add minced garlic and stir-fry until fragrant.
- Add protein of choice and cook until browned and cooked through. Remove from skillet and set aside.
- In the same skillet, add more oil if needed and sauté onion, carrot, bell pepper, mushrooms, and cabbage until tender-crisp.
- Return protein to the skillet. Add cooked soba noodles.
- In a small bowl, mix together soy sauce, oyster sauce, mirin, and sesame oil. Pour over the noodles and vegetables. Toss to combine.
- Season with salt and pepper to taste.
- Garnish with sliced spring onions and sesame seeds before serving.
Notes
- Be sure not to overcook the soba noodles to avoid them becoming mushy.
- Feel free to swap out any vegetables or protein to suit your preferences or dietary restrictions.
